About Jen

Jen Mascarenas has been vegan since 1993 and vegetarian since 1989. She loves learning about nutrition and experimenting with new recipes, including trying to veganize Filipino dishes for her husband, Ramon. 

Her cooking style is high carb and low fat with a rainbow of produce, and always vegan because she loves the animals as well as good health.

Jen says, “Eating a whole-foods, plant-based diet that is high in carbs and low in fat is the way to regain optimal health.”
